Method

Preparation of Eggplant

    Fire Roasting the Eggplant

    Preheat your grill or oven to a high temperature. Place the whole eggplants directly on the grill or on a baking sheet in the oven. Roast until the skin is charred and the flesh is soft, about 25-30 minutes, turning occasionally.

    Cooling and Scooping

    Remove the roasted eggplants from the heat and let them cool for about 10 minutes. Once cool enough to handle, cut the eggplants in half and scoop out the flesh into a mixing bowl, discarding the skin.

Blending the Dip

    Combining Ingredients

    In the bowl with the eggplant flesh, add tahini, minced garlic, lemon juice, olive oil, cumin, salt, and black pepper.

    Blending

    Using a fork or a food processor, blend the mixture until smooth and creamy. Taste and adjust seasoning with additional salt or lemon juice if desired.

Serving

    Garnishing

    Transfer the Baba Ghanoush to a serving bowl. Drizzle a little olive oil on top, and sprinkle with fresh parsley and paprika for garnish.

    Serve the Veg Baba Ghanoush with warm pita bread for dipping.
