Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, whole wheat flour, salt, sugar, and instant yeast. Whisk together until well combined.

Add Wet Ingredients
Make a well in the center of the dry ingredients and pour in the warm water and olive oil. Stir with a wooden spoon until the mixture comes together into a shaggy dough.

Transfer the dough onto a floured surface and knead for about 8-10 minutes, or until the dough is smooth and elastic. If the dough is too sticky, add a little more flour as needed.

Place the kneaded dough in a greased bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
