    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, whole wheat flour, salt, sugar, and instant yeast. Whisk together until well combined.

    Make a well in the center of the dry ingredients and pour in the warm water and olive oil. Stir with a wooden spoon until the mixture comes together into a shaggy dough.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 8-10 minutes, or until the dough is smooth and elastic. If the dough is too sticky, add a little more flour as needed.

    Place the kneaded dough in a greased bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.

Cooking

    While the dough is rising, preheat your oven to 475°F (245°C) and place a baking stone or an inverted baking sheet inside to heat up.

    Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball, then flatten it into a disc about 1/4 inch thick.

    Place the discs onto the preheated baking stone or baking sheet. Bake for about 5-7 minutes, or until they puff up and are lightly golden.
