Prepare the filling
In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Cook the rice
Add the uncooked rice to the saucepan and stir for 1-2 minutes. Add 2 cups of water, salt, black pepper, cumin, and paprika. Bring to a boil, then reduce heat and cover. Cook for 15 minutes or until rice is tender and water is absorbed. Stir in the chopped mint and lemon juice, then remove from heat.

Stuff the grape leaves
Lay a grape leaf on a flat surface, vein side up. Place about 2 tablespoons of the rice filling at the base of the leaf. Fold the sides over the filling and roll up tightly from the base. Repeat with remaining leaves and filling.
