Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, salt, black pepper, and lemon juice. Add the salmon fillets and coat them well. Let them marinate for at least 15 minutes.

  2. 2

    Grill the Salmon

Preheat the grill to medium-high heat. Place the marinated salmon fillets on the grill. Grill for about 4-5 minutes on each side, or until the salmon flakes easily with a fork. Remove from the grill and let rest.

Making the Greek Slaw

  1. 3

    Combine Slaw Ingredients

In a large bowl, mix together the shredded cabbage, grated carrot, thinly sliced red onion, and crumbled feta cheese.

  2. 4

    Prepare Dressing

In a smaller bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and black pepper.

  3. 5

    Dress the Slaw

Pour the dressing over the cabbage mixture and toss to combine. Let sit for about 10 minutes to allow flavors to meld.

Making the Garlic Chili Sauce

  1. 6

    Combine Sauce Ingredients

In a small bowl, mix together minced garlic, chili paste, honey, and soy sauce. Stir until well combined.

Assembling the Tacos

  1. 7

    Prepare Flatbreads

Warm the flatbreads or pita bread on the grill for about 1-2 minutes until slightly toasted.

  2. 8

    Assemble the Tacos

On each flatbread, place a portion of the grilled salmon, top with Greek slaw, and drizzle with garlic chili sauce.

  3. 9

    Garnish

Sprinkle fresh chopped cilantro on top of each taco.
