Preparation

Prepare the Feta
Crumble the feta cheese into small pieces and mix it with oregano and black pepper in a bowl. This will be the filling for the rolls.

Fill the Rolls
Place a spoonful of the feta mixture at one end of the layered phyllo pastry. Fold the sides of the pastry over the filling, then roll it up tightly from the end with the filling to create a roll.

Prepare for Frying
Repeat the filling and rolling process with the remaining phyllo sheets and feta mixture. Set the rolls aside.
Cooking

Heat the Oil
In a large frying pan, heat the olive oil over medium heat until hot.

Fry the Rolls
Carefully place the feta rolls into the hot oil, a few at a time, and fry until golden brown and crispy, about 3-4 minutes on each side. Remove them with a slotted spoon and drain on paper towels.
Serving

Plate the Rolls
Arrange the fried feta rolls on a serving platter. Drizzle with honey or serve with marinara sauce on the side for dipping.
