Chicken Shawarma

    Marinate the Chicken

    In a bowl, mix the yogurt, garlic, cumin, coriander, paprika, turmeric, olive oil, salt, and black pepper. Add the chicken thighs and coat well. Cover and refrigerate for at least 1 hour or overnight for best flavor.

    Cook the Chicken

    Preheat the grill or grill pan to medium-high heat. Remove the chicken from the marinade and grill for about 5-7 minutes on each side or until cooked through. Allow resting for a few minutes before slicing.

Steak Kebab

    Prepare the Marinade

    In a bowl, combine cubed beef sirloin, diced bell peppers, diced onion, olive oil, cumin, paprika, salt, and black pepper. Mix until well combined.

    Skewer and Grill

    Thread the beef and vegetables onto skewers. Preheat the grill to medium-high heat and cook the kebabs for about 8-10 minutes, turning occasionally, until the beef is cooked to your liking.

    Marinate the Chicken

    In a bowl, combine the yogurt, minced garlic, cumin, coriander, salt, and black pepper. Add cubed chicken breast and mix well. Cover and refrigerate for at least 30 minutes.

    Skewer and Grill

    Thread the marinated chicken onto skewers. Preheat the grill to medium-high heat and grill the chicken kebabs for about 6-8 minutes, turning occasionally, until fully cooked.

Falafel

    Prepare the Falafel Mixture

    Drain and rinse the soaked chickpeas. In a food processor, blend the chickpeas, chopped onion, minced garlic, parsley, cumin, coriander, baking powder, salt, and black pepper until a coarse mixture forms.

    Form and Fry the Falafel

    Shape the mixture into small balls or patties. Heat oil in a frying pan over medium heat. Fry the falafel for about 3-4 minutes on each side or until golden brown. Drain on paper towels.
