Method

Hummus Preparation

    Prepare Chickpeas

    Drain and rinse the canned chickpeas.

    Blend Ingredients

    In a food processor, combine chickpeas, tahini, garlic, lemon juice, olive oil, ground cumin, salt, and water. Blend until smooth.

    Adjust Consistency

    If the hummus is too thick, add more water, one tablespoon at a time, until desired consistency is reached.

    Taste and Adjust

    Taste the hummus and adjust salt, lemon juice, or garlic to your preference.

Baba Ghannoush Preparation

    Roast Eggplant

    Preheat the oven to 400°F (200°C). Prick the eggplant with a fork and roast for 30-40 minutes until soft.

    Scoop and Blend

    Allow the eggplant to cool, then scoop out the flesh and add it to a food processor with tahini, garlic, lemon juice, olive oil, and salt. Blend until smooth.

    Taste and Adjust

    Taste the baba ghannoush and adjust salt or lemon juice as needed.

Stuffed Grape Leaves Preparation

    Prepare Filling

    Finely chop the onion and parsley. In a bowl, mix the uncooked rice, chopped onion, parsley, dill, olive oil, salt, and pepper.

    Stuff Grape Leaves

    Take a grape leaf, place a teaspoon of filling at the base, fold in the sides, and roll tightly. Repeat with remaining leaves and filling.

    Cook Grape Leaves

    Place the stuffed grape leaves in a pot, cover with water, and simmer on low for about 30-40 minutes until the rice is cooked.

Assembling the Mezze Tray

    Prepare Pita and Crudités

    Cut pita bread into triangles and arrange with carrot sticks, cucumber sticks, and bell pepper slices on a serving platter.

    Arrange Other Items

    Spoon hummus and baba ghannoush into small bowls and place on the tray. Add stuffed grape leaves and kalamata olives.

    Serve

    Serve the mezze tray with a variety of dips, pita, and crudités for a delightful appetizer experience.
