Cooking Pasta

Cook Orzo
Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop the cooking process.
Marinating Chickpeas

Prepare Chickpeas
In a medium bowl, combine the drained chickpeas, olive oil, lemon juice, garlic powder, ground cumin, salt, and black pepper. Mix well and let marinate for at least 15 minutes.

Combine Ingredients
In a large mixing bowl, add the cooked orzo, marinated chickpeas, cherry tomatoes, red onion, cucumber, mint, feta cheese, and Kalamata olives. Gently toss to combine all ingredients.
Serving

Chill and Serve
Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled or at room temperature.
