Method

Preparing the Potatoes

  1. 1

Preheat your oven to 425°F (220°C).

  2. 2

Wash the baby potatoes thoroughly and cut them in half.

  3. 3

In a large mixing bowl, combine the halved potatoes, olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper.

  4. 4

Toss the potatoes until they are well coated with the mixture.

Roasting the Potatoes

  1. 5

    Roast the Potatoes

Spread the coated potatoes in a single layer on a baking sheet.

  2. 6

Roast in the preheated oven for 25-30 minutes or until golden brown and crispy, tossing halfway through to ensure even cooking.

  3. 7

Once done, remove from the oven and let them cool for a few minutes.

Adding Toppings

  1. 8

While the potatoes are roasting, prepare your choice of toppings.

  2. 9

For the toppings, you can choose any combination of feta cheese, chopped parsley, sliced olives, diced tomatoes, or sliced jalapeños.

  3. 10

Once the potatoes have cooled slightly, sprinkle your chosen toppings generously over the potatoes.

Serving

  1. 11

Serve the loaded Greek potatoes warm as a delicious side dish or appetizer.

  2. 12

Enjoy with a sprinkle of extra lemon juice or fresh herbs if desired.
