Prepare the Beef Filling

Cook the Onions and Garlic
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Mix the Ground Beef
In a large mixing bowl, combine the sautéed onion and garlic mixture with the ground beef, chopped parsley, ground cumin, ground allspice, salt, and black pepper. Mix well until all ingredients are evenly combined.

Form the Beef Filling
Using your hands, take a handful of the beef mixture and shape it into a log or patty that will fit inside the pita bread. Repeat until all the beef filling is used.
Assemble the Arayes

Stuff the Pita
Take a piece of pita bread and carefully open it to create a pocket. Stuff each pita with one of the beef logs, pressing gently to ensure it fits well inside without tearing the bread.

Grill the Stuffed Pitas
Place the stuffed pitas on the grill and cook for about 3-4 minutes on each side, or until the pita bread is crispy and the beef is cooked through. You can press down gently with a spatula to ensure even grilling.
