Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Potatoes
Wash and scrub the Yukon Gold potatoes thoroughly. Cut them into wedges or bite-sized pieces, about 1 to 1.5 inches thick.

Combine Ingredients
In a large mixing bowl, add the cut potatoes, olive oil, salt, black pepper, minced garlic, lemon juice, lemon zest, chopped oregano, and chopped parsley. Toss everything together until the potatoes are well coated.
Roasting

Spread on Baking Sheet
Transfer the coated potatoes onto a large baking sheet in a single layer. Spread them out evenly to ensure they roast nicely.

Roast the Potatoes
Place the baking sheet in the preheated oven and roast for 30-35 minutes, or until the potatoes are golden brown and crispy. Toss them halfway through to ensure even cooking.

Serve Hot
Once roasted, remove the potatoes from the oven. Allow them to cool for a few minutes before serving. Garnish with additional fresh parsley if desired.
