Preparing the Fries

Cutting the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to form fries.

Soaking the Potatoes
Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

Frying the Potatoes
Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully add the fries in small batches and fry until golden brown and crispy, approximately 5-7 minutes. Remove fries and drain on paper towels, sprinkling with salt immediately.
Making the Creamy Garlic Chili Sauce

Mixing Ingredients
In a bowl, combine mayonnaise, minced garlic (from 2 cloves), chili powder, lemon juice, salt, and black pepper. Stir until smooth and well combined.
Assembling Feta Fries

Drizzling Sauce
Place the hot fries in a serving basket or plate. Drizzle the creamy garlic chili sauce generously over the fries.

Crumble feta cheese over the fries and sprinkle with chopped parsley for garnish.
