Salad

    Prepare the Salad

    In a large bowl, chop the romaine lettuce, cherry tomatoes, and cucumber. Thinly slice the red onion.

    Make the Dressing

    In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.

    Combine and Serve

    Pour the dressing over the chopped vegetables, toss well to combine, and serve immediately.

Hummus

    Blend Hummus Ingredients

    In a food processor, combine the canned chickpeas (drained and rinsed), tahini, garlic cloves, olive oil, lemon juice, and salt.

    Process Until Smooth

    Blend until smooth, adding water as necessary to achieve desired consistency.

    Serve

    Transfer to a serving bowl, sprinkle with paprika, and serve with pita or vegetables.

Kebabs

    Marinate the Chicken and Steak

    Cut the chicken breast and steak into bite-sized pieces. In a bowl, mix olive oil, garlic powder, paprika, cumin, salt, and black pepper. Add the chicken and steak, and marinate for at least 30 minutes.

    Prepare the Salmon

    Cut the salmon into chunks and season with olive oil, salt, and pepper.

    Skewer the Meat

    Thread the marinated chicken, steak, and salmon onto the wooden skewers.

    Grill the Kebabs

    Preheat the grill to medium-high heat. Grill the skewers for about 10-15 minutes, turning occasionally, until fully cooked.

Falafel

    Soak the Chickpeas

    Soak the dried chickpeas in water overnight. Drain and rinse them before using.

    Make the Falafel Mixture

    In a food processor, combine soaked chickpeas, onion, garlic, parsley, cumin, salt, black pepper, and baking powder. Pulse until a coarse mixture forms.

    Form the Falafel Balls

    Shape the mixture into small balls or patties.

    Fry the Falafel

    Heat oil in a deep frying pan over medium heat. Fry the falafel balls until golden brown on all sides. Drain on paper towels.

Rice

    Rinse the basmati rice under cold water until the water runs clear.

Grilled Pita
