Falafel Preparation

    Soak Chickpeas

    Place the dried chickpeas in a bowl and cover with water. Soak overnight or for at least 8 hours.

    Blend Ingredients

    Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, black pepper, and red pepper flakes. Pulse until a coarse mixture forms, scraping down the sides as necessary.

    Add Flour

    Transfer the mixture to a mixing bowl and stir in the flour. Mix until well combined. If the mixture is too wet, add a bit more flour.

    Chill Mixture

    Cover the bowl with plastic wrap and refrigerate for at least 1 hour.

Frying Falafel

    Heat Oil

    In a deep pot or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Form Falafel Balls

    Using your hands or a small scoop, form the chilled falafel mixture into small balls or patties, about 1.5 inches in diameter.

    Fry Falafel

    Carefully drop the falafel balls into the hot oil, a few at a time. Fry for about 3-4 minutes or until golden brown, turning occasionally for even cooking.

    Drain Falafel

    Using a slotted spoon, remove the fried falafel from the oil and transfer them to a plate lined with paper towels to drain excess oil.

Serving

    Prepare Tray

    On a serving tray, arrange the pita bread, a bowl of hummus, tahini sauce, and fresh vegetables.

    Serve

    Serve the hot falafel alongside the prepared tray, allowing everyone to assemble their own pita with the falafel and toppings.
