Falafel Preparation

    Soak the Chickpeas

    Place the dried chickpeas in a large bowl and cover with water. Let them soak overnight, or for at least 8 hours.

    Prepare the Falafel Mixture

    After soaking, drain the chickpeas and place them in a food processor. Add the onion, parsley, cilantro, garlic, cumin, coriander, salt, black pepper, and baking powder. Pulse until the mixture is coarse but well combined.

    Form the Falafel Balls

    Transfer the mixture to a bowl and stir in the flour. Using your hands, form small balls or patties, about 1.5 inches in diameter.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium heat. The oil should be hot enough that a small piece of the falafel mixture sizzles upon contact.

    Fry the Falafel

    Carefully drop the falafel balls into the hot oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until they are golden brown. Remove and drain on paper towels.

Serving Instructions

    Prepare the Pita and Vegetables

    Warm the pita bread slightly, either in an oven or on a skillet. Chop the fresh vegetables into bite-sized pieces.

    Assemble the Platter

    On a serving platter, arrange the falafel, pita bread, fresh vegetables, and drizzle with tahini sauce. Serve immediately.
