Wrap Base Preparation

    Prepare the Cauliflower

    Preheat your oven to 400°F (200°C). Remove the leaves and stem from the cauliflower. Cut the cauliflower into florets.

    Season the Cauliflower

    In a large bowl, toss the cauliflower florets with olive oil, salt, black pepper, and garlic powder until well coated.

    Roast the Cauliflower

    Spread the cauliflower florets on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, until golden and tender. Remove from the oven and let cool slightly.

    Blend into Wraps

    Once cooled, transfer the roasted cauliflower to a food processor and pulse until it reaches a dough-like consistency. Shape the mixture into flat wraps.

    Make the Garlic Sauce

    In a small bowl, crush the garlic cloves and mix them with Greek yogurt, lemon juice, salt, and dill. Stir until smooth and well combined.

    Chop the tomatoes into thin slices. Slice the pickles into rounds.

    Spread a generous amount of garlic sauce on each cauliflower wrap. Top with sliced tomatoes and pickles.
