Preparation of Meat

Mix the Meat
In a large bowl, combine the ground beef and ground lamb. Add minced garlic, chopped onion, ground cumin, ground coriander, paprika, salt, and black pepper. Mix thoroughly until well combined.

Shape the Mixture
Shape the meat mixture into an even log and wrap it tightly in plastic wrap. Refrigerate for at least 1 hour to firm up.

Preheat the Oven
Preheat your oven to 180°C (350°F).

Cook the Meat
Remove the wrapped meat log from the refrigerator. Place it on a baking sheet lined with parchment paper. Brush the top with olive oil. Bake for 45-50 minutes or until the internal temperature reaches 70°C (160°F).

Slice the Meat
Once cooked, let the meat rest for 10 minutes before slicing thinly against the grain.

Prepare the Pita
Warm the pita bread in the oven for 5 minutes or until soft.

Assemble the Gyro Tray
On a serving platter, layer the sliced beef and lamb, diced tomatoes, diced cucumber, sliced red onion, crumbled feta cheese, and tzatziki sauce. Serve with warm pita bread on the side.
