Preparing the Baklava

Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Nut Mixture
In a bowl, combine the chopped walnuts, chopped pistachios, granulated sugar, and ground cinnamon. Mix well and set aside.

Add the Nut Mixture
Spread a third of the nut mixture evenly over the layered phyllo dough. Repeat the layering process with 4 more sheets of phyllo, brushing each with melted butter, followed by another layer of the nut mixture. Repeat this process until all the nut mixture is used.

Cut the Baklava
Using a sharp knife, cut the baklava into diamond or square shapes, making sure to cut through all layers.

Bake the Baklava
Bake in the preheated oven for about 45-50 minutes, or until the top is golden and crisp.
Preparing the Sugar Syrup

Add Flavoring
Once the sugar has dissolved, add vanilla extract and lemon juice. Bring to a boil, then reduce heat and simmer for about 10 minutes.

Cool the Syrup
Remove from heat and let the syrup cool completely.

Pour Syrup Over Baklava
Once the baklava is done baking, remove it from the oven and immediately pour the cooled syrup evenly over the hot baklava.

Garnish
Sprinkle crushed pistachios over the top of the baklava for garnish.

Let it Rest
Allow the baklava to cool completely at room temperature before serving. This will help the syrup soak in and the baklava to set.
