Pasta Dough Preparation

    Mixing the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and crack the eggs into the well.

    Kneading the Dough

    Using a fork, gradually incorporate the flour into the eggs until a shaggy dough forms. Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

    Resting the Dough

    Wrap the kneaded dough in plastic wrap and let it rest at room temperature for 30 minutes.

    Cooking the Sauce

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sautΓ© for about 1-2 minutes until fragrant, being careful not to burn it.

    Adding Tomatoes

    Pour in the crushed tomatoes and stir to combine. Bring the mixture to a simmer.

    Seasoning the Sauce

    Add fresh basil, salt, and black pepper to taste. Let the sauce simmer for about 20 minutes, stirring occasionally.

Cooking the Pasta

    Rolling out the Dough

    After the dough has rested, divide it into four pieces. Roll each piece out on a floured surface to your desired thickness.

    Cutting the Pasta

    Cut the rolled dough into your preferred shape (fettuccine, tagliatelle, etc.). Dust with flour to prevent sticking.

    Boiling the Pasta

    Bring a large pot of salted water to a boil. Add the fresh pasta and cook for 2-4 minutes until al dente. Drain and reserve some pasta water.

    Combining Pasta and Sauce

    Add the drained pasta to the sauce in the skillet. Toss to combine, adding reserved pasta water if needed to adjust consistency.
