Boil Water Mixture

In a medium saucepan, combine 1 cup of water, 2 tablespoons of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat.

Add Flour

Once boiling, remove the saucepan from heat and quickly stir in 1 cup of all-purpose flour until a dough forms. Return the saucepan to low heat for about 1-2 minutes, stirring continuously until the mixture pulls away from the sides of the pan and forms a ball.

Incorporate Eggs

Transfer the dough to a mixing bowl and let it cool for about 5 minutes. Add 2 large eggs, one at a time, mixing well after each addition until the dough is smooth and glossy.

Heat Oil

In a deep frying pan or pot, heat 4 cups of vegetable oil over medium-high heat until it reaches 375°F (190°C).

Pipe Churros

Transfer the dough to a piping bag fitted with a large star tip. Carefully pipe strips of dough (about 4-6 inches long) into the hot oil, cutting them with scissors.

Fry Churros

Fry the churros until they are golden brown, about 2-3 minutes per side. Use a slotted spoon to remove them from the oil and drain on paper towels.

In a shallow bowl, combine 1 cup of granulated sugar with 1 teaspoon of ground cinnamon.

While the churros are still warm, roll them in the sugar-cinnamon mixture until fully coated.
