    Prepare the Marinade

    In a bowl, whisk together the olive oil, lemon juice, minced garlic, chopped parsley, salt, black pepper, and paprika to create a marinade.

    Marinate the Meats

    Place the beef steak, chicken thighs, and chorizo sausage into a large resealable plastic bag or a dish. Pour the marinade over the meats, ensuring all pieces are coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat. If using a charcoal grill, let the coals burn until they are covered with white ash.

    Grill the Meats

    Remove the meats from the marinade and allow excess marinade to drip off. Place the beef steak on the grill and cook for about 5-7 minutes per side for medium-rare, or until desired doneness. Grill the chicken thighs for about 6-8 minutes per side until cooked through and juices run clear. Grill the chorizo for about 3-4 minutes on each side until nicely browned and cooked through.

Serving

    Rest and Slice

    Once grilled, remove the meats from the grill and let them rest for about 5 minutes. Slice the beef steak against the grain.

    Garnish and Serve

    Serve the grilled meats on a platter, garnished with lemon wedges and additional fresh parsley. Enjoy with sides of your choice.
