Prepare the Meat
Pound the beef or chicken cutlets to an even thickness of about 1/2 inch using a meat mallet or rolling pin. This ensures even cooking.

Season the Cutlets
Sprinkle salt and black pepper on both sides of the cutlets. Let them rest for about 15 minutes to absorb the seasoning.

Bread the Cutlets
Dredge each cutlet in flour, shaking off the excess. Dip it into the beaten eggs, allowing the excess to drip off, and then coat it with breadcrumbs, pressing gently to adhere. Repeat for all cutlets.

Heat the Oil
In a large skillet or frying pan, heat the vegetable oil over medium-high heat until it shimmers. To test if the oil is ready, drop a breadcrumb into the oil; it should sizzle.

Fry the Cutlets
Carefully add the breaded cutlets to the hot oil, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and cooked through. Adjust the heat as necessary to prevent burning.

Drain Excess Oil
Once cooked, remove the cutlets from the oil and place them on a plate lined with paper towels to absorb excess oil.
