Custard Base

Caramel

Method

Caramel Preparation

  1. 1

    Make the Caramel

In a medium saucepan, combine 1 cup of granulated sugar with 1 tablespoon of water. Cook over medium heat while stirring gently until the sugar has dissolved.

  2. 2

    Cook the Caramel

Continue to cook without stirring until the mixture turns a golden brown color. This should take about 5-7 minutes. Be careful not to overcook, as it can burn quickly.

  3. 3

    Coat the Flan Mold

Immediately pour the caramel into a round flan mold or a cake pan, tilting to coat the bottom evenly. Set aside to cool and harden.

Custard Preparation

  1. 4

    Prepare the Custard Mixture

In a mixing bowl, whisk together 4 eggs until smooth. Add 1 cup of sweetened condensed milk, 1 cup of evaporated milk, and 1 teaspoon of vanilla extract. Mix until fully combined and smooth.

  2. 5

    Strain the Mixture

Strain the custard mixture through a fine mesh sieve into a separate bowl to ensure a silky texture.

  3. 6

    Pour into Mold

Carefully pour the custard mixture over the hardened caramel in the flan mold.

Baking

  1. 7

    Prepare for Baking

Preheat your oven to 350ยฐF (175ยฐC). Prepare a large baking dish with water to create a water bath for the flan.

  2. 8

    Bake the Flan

Place the flan mold into the prepared baking dish and fill the dish with boiling water until it reaches halfway up the sides of the flan mold. Bake for 50-60 minutes, or until the custard is set and a knife inserted in the center comes out clean.

  3. 9

    Cool and Refrigerate

Once baked, remove from the oven and allow to cool to room temperature. Then, refrigerate for at least 4 hours or overnight.

Serving

  1. 10

    Unmold the Flan

To serve, run a knife around the edges of the flan to loosen it. Place a serving plate over the mold and invert it to release the flan onto the plate, allowing the caramel to flow over the top.

  2. 11

    Enjoy

Slice and serve chilled. Enjoy your classic Argentine flan!
