Prepare the Chicken

Preheat your oven to 200°C (400°F). Pat the chicken dry with paper towels. Rub the entire chicken with olive oil, ensuring it's evenly coated.

Season the Chicken

Chop the garlic and rosemary finely. In a small bowl, mix the garlic, rosemary, salt, and black pepper. Rub this mixture all over the chicken, including inside the cavity.

Add Lemon

Cut the lemon in half and place it inside the cavity of the chicken for added flavor.

Roast the Chicken

Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes or until the internal temperature reaches 75°C (165°F). Baste the chicken with its juices every 30 minutes.

Rest the Chicken

Once cooked, remove the chicken from the oven and let it rest for 15 minutes before carving.

Prepare Brussels Sprouts

Trim the ends of the Brussels sprouts and cut them in half. Rinse them under cold water and set aside.

Cook Bacon

In a large skillet over medium heat, cook the bacon until crispy. Remove from the skillet and chop into pieces, leaving the bacon fat in the pan.

Sauté Brussels Sprouts

In the same skillet with the bacon fat, add the Brussels sprouts. Cook for about 5-7 minutes until they are tender and slightly browned.

Add Honey and Butter

Stir in the honey and butter, and mix well to coat the Brussels sprouts. Cook for another 2-3 minutes.

Combine with Bacon

Add the chopped bacon back to the skillet with the Brussels sprouts and stir to combine. Cook for an additional minute before serving.

In a heatproof bowl, combine the dark chocolate and heavy cream. Set the bowl over a pot of simmering water (double boiler) and stir until melted and smooth.

Remove from heat and stir in the vanilla extract and sugar until fully dissolved.

Chill the Mixture

Pour the chocolate mixture into serving cups and refrigerate for at least 2 hours until set.

Once set, remove from the fridge and serve chilled. Optionally, top with whipped cream or chocolate shavings.
