Preparation of Marinade

    Prepare the Marinade

    In a bowl, combine olive oil, salt, black pepper, minced garlic cloves, chopped parsley, and lemon juice. Mix well until all ingredients are incorporated.

    Marinate the Meat

    Place the flank steak, short ribs, pork sausages, chorizo sausages, and beef ribs in a large dish. Pour the marinade over the meat, ensuring all pieces are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Grilling

    Prepare the Grill

    Preheat the grill to medium-high heat. Ensure that the grill grates are clean and lightly oiled to prevent sticking.

    Grill the Meat

    Remove the marinated meat from the refrigerator and let it come to room temperature. Grill the flank steak and beef ribs for about 6-8 minutes per side, or until desired doneness. Grill the short ribs for about 8-10 minutes per side. The sausages should be grilled for about 5-6 minutes, turning occasionally until evenly browned.

    Grill the Vegetables

    Place the prepared vegetables on the grill during the last 10 minutes of cooking. Grill until tender and slightly charred.

    Serve the Asado

    Once the meat is cooked, remove it from the grill and let it rest for a few minutes before slicing. Serve with chimichurri sauce, grilled vegetables, and crusty bread on the side.
