Method
Curry Base
Toast spices
Reduce heat to medium-low, add yellow curry powder, turmeric, ground coriander, cumin, and mild red chili powder to the onion mixture. Stir constantly for 1 minute to bloom the spices and release their aroma.
Add tomatoes and season
Add the chopped tomatoes, 1.5 tsp salt, and 1 tsp sugar. Stir, increase heat slightly, and cook until tomatoes break down and oil begins to separate from the masala, about 6–8 minutes.

Prepare vegetables
While the masala cooks, halve the okra lengthwise, cut eggplant into pieces, and (if using) cube potatoes. Pat okra dry to reduce slime.
Add potatoes and eggplant
Add the potato cubes (if using) and eggplant pieces to the masala. Stir to coat with the spice mixture and cook 3–4 minutes so eggplant begins to soften.
Add water and simmer
Pour in 400 ml water, bring to a gentle simmer, cover partially, and cook for 8–10 minutes until potatoes and eggplant are nearly tender.
Add okra
Add the prepared okra to the simmering curry, stir gently to combine, and simmer uncovered for 6–8 minutes. Cook until okra is tender but not mushy; cooking uncovered helps reduce sliminess.
Coconut & Finish
Add coconut milk
Lower heat to medium-low and stir in 400 ml coconut milk. Gently bring the curry to a simmer — do not boil vigorously to prevent coconut milk from splitting. Simmer 5 minutes to meld flavors.
Adjust seasoning and tang
Stir in tamarind paste (or lime juice) and taste. Adjust salt and sugar as needed to balance savory, sweet and tangy notes. Add curry leaves at this stage if using and simmer 1–2 minutes to release aroma.
Finish
If the curry is too thin, simmer a few minutes uncovered to reduce to desired consistency. If too thick, add a splash of water. Turn off heat and sprinkle chopped cilantro over the curry.
Tempering (Optional but recommended)
Prepare tempering
In a small frying pan, heat 1 tps vegetable oil over medium heat. Add mustard seeds; when they start to pop, add fenugreek seeds (if using), and dried red chilies. Fry briefly until aromatic and chilies blister, 20–30 seconds.
Finish with tempering
Pour the hot tempering over the finished curry. The sizzling tempering will add an extra layer of fragrance and a slightly toasty note to the dish.
To Serve
Serve the Malaysian Tamil-style yellow curry hot with steamed rice, appam, roti, or naan. Offer lime wedges alongside for extra brightness.
