Cocktail

    Chill glass

    Place a large rocks glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail to lightly chill it. Discard ice water before serving.

    Measure and combine

    In a mixing glass, add 2 oz bourbon, 0.75 oz Cocchi Barolo Chinato, 0.5 oz Averna, and 2 dashes of Angostura bitters.

    Add ice

    Fill the mixing glass with enough ice so the spoon can move freely and the liquid will be adequately chilled (about 4–6 large ice cubes or a large block broken to fit).

    Stir

    Stir gently but thoroughly for 20–30 seconds (or about 20–30 full spoon rotations) until the mix is well chilled, slightly diluted, and the outside of the mixing glass feels cold and lightly frosted.

    Prepare serving glass

    If chilled with ice water, dump the water and add a single large clear ice cube or 2–3 large ice pieces to the rocks glass.

    Strain

    Using a Hawthorne or julep strainer, strain the stirred cocktail from the mixing glass into the prepared rocks glass over the large ice.

    Garnish

    Express the oils of an orange peel over the drink by holding the peel skin-side down about 3–4 inches above the glass and giving it a quick squeeze to spray the oils across the surface. Run the peel around the rim and drop it into the glass as a garnish.

    Serve

    Serve immediately. Sip slowly to enjoy the layered aromatics: rich bourbon, the fragrant quinine and spice of Barolo Chinato, and the bittersweet caramel of Averna.

Optional: Tips

    Adjust sweetness and bitterness by small increments: add a 1/4 oz more Averna if you prefer a sweeter, more herbal profile; reduce Averna by 1/4 oz or increase Cocchi Barolo Chinato by 1/4 oz for a more wine-bitter edge.

    For a smoother presentation, use one large clear ice cube to minimize dilution while keeping the cocktail cold.
