Prepare fig puree
If you don't already have fig puree: remove the stem from 1 large ripe fig, chop roughly and place in a blender or small food processor with 0.25 oz simple syrup. Pulse until smooth. Strain through a fine mesh sieve if you prefer a very smooth texture. Yield about 0.5 oz.

Fill a cocktail shaker halfway with ice.

Add 2 oz gin, 0.75 oz ruby port, 0.5 oz fresh fig puree, 0.5 oz lemon juice, 0.25 oz simple syrup and 2 dashes orange bitters to the shaker.

Dry shake (no ice) vigorously for 10 seconds to emulsify the fig puree with the citrus and spirits.

Add ice to the shaker (if you removed it for a dry shake) and shake hard for 12–15 seconds until well chilled and the exterior of the shaker is frosty.

Carefully float 0.25–0.5 oz ruby port over the back of a spoon onto the surface to create a layered, wine-kissed top (optional).
