Method

Cocktail

  1. 1

    Prepare fig puree

If you don't already have fig puree: remove the stem from 1 large ripe fig, chop roughly and place in a blender or small food processor with 0.25 oz simple syrup. Pulse until smooth. Strain through a fine mesh sieve if you prefer a very smooth texture. Yield about 0.5 oz.

  2. 2

Fill a cocktail shaker halfway with ice.

  3. 3

Add 2 oz gin, 0.75 oz ruby port, 0.5 oz fresh fig puree, 0.5 oz lemon juice, 0.25 oz simple syrup and 2 dashes orange bitters to the shaker.

  4. 4

Dry shake (no ice) vigorously for 10 seconds to emulsify the fig puree with the citrus and spirits.

  5. 5

Add ice to the shaker (if you removed it for a dry shake) and shake hard for 12–15 seconds until well chilled and the exterior of the shaker is frosty.

  6. 6

Double-strain the mixture into a chilled coupe or Nick & Nora glass to remove small bits of fig and ice shards.

  7. 7

Carefully float 0.25–0.5 oz ruby port over the back of a spoon onto the surface to create a layered, wine-kissed top (optional).

Garnish

  1. 8

Express a lemon twist over the drink to release oils, wipe the rim with it, and drop or rest it on the glass.

  2. 9

Garnish with a fresh fig slice perched on the rim or floated on the surface. Serve immediately.
