Directions
- 1
Cook the Rigatoni
Bring a large pot of salted water to a boil. Add the rigatoni pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
- 2
Cook the Sausage
In a large skillet over medium heat, add the olive oil. Once hot, add the spicy Italian sausage, breaking it up with a wooden spoon. Cook until browned and cooked through, about 7-10 minutes.
- 3
Add Garlic and Spices
Add the minced garlic and crushed red pepper flakes to the skillet with the sausage. Cook for an additional 1-2 minutes until fragrant, stirring frequently.
- 4
Make the Sauce
Pour in the canned crushed tomatoes and stir to combine. Bring the sauce to a simmer and let it cook for about 10 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
- 5
Combine Pasta and Sauce
Add the cooked rigatoni to the skillet with the sauce. Toss to coat the pasta evenly in the sauce. If the sauce is too thick, add some reserved pasta water to reach desired consistency.
- 6
Finish with Basil and Cheese
Tear the fresh basil leaves and add them to the pasta. Stir in the grated Parmesan cheese, mixing until melted and well combined.
- 7
Serve
Serve the rigatoni Calabresi hot, garnished with extra Parmesan and basil if desired.
