Prepare the Filling
In a mixing bowl, combine ricotta cheese and powdered sugar. Mix until smooth and creamy.

Add Flavor
Stir in vanilla extract, chocolate chips, and candied orange peel into the ricotta mixture until evenly distributed.

Chill the Filling
Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld.

Make the Dough
In a large bowl, sift together flour, granulated sugar, cocoa powder, and salt.

Incorporate Wet Ingredients
Add the egg and white wine to the dry ingredients and mix until a dough forms. Knead the dough on a floured surface until smooth.

Rest the Dough
Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.

Roll and Cut
Roll out the dough to about 1/8-inch thickness. Cut into rectangles measuring 3 inches by 5 inches.

Fry the Shells
Heat oil in a deep frying pan over medium heat. Wrap each rectangle around a cannoli tube and secure with a bit of the dough. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Fill the Shells
Once the shells are cool, carefully remove them from the tubes. Use a piping bag to fill each shell with the chilled ricotta filling.

Dip the ends of each filled cannolo in crushed pistachios and dust with powdered sugar before serving.
