Preheat your oven to 425°F (220°C).

Prepare the Cauliflower
Remove the leaves and stem from the cauliflower head. Cut it into bite-sized florets.

Make the Shawarma Spice Mix
In a small bowl, combine ground cumin, ground coriander, ground paprika, ground turmeric, ground cinnamon, garlic powder, salt, and black pepper.

In a large mixing bowl, toss the cauliflower florets with olive oil until evenly coated. Then sprinkle the shawarma spice mix over the cauliflower and toss again to ensure all pieces are well coated.
