Begin by harvesting the Galia grapes at their peak ripeness. Ensure that the grapes are free from any rot and undesirable elements.

Harvesting the Grapes

Once harvested, crush and destem the grapes to extract the juice. This can be done using a grape crusher or by foot-crushing in small batches.

Crushing and Destemming

After crushing, add the yeast to the grape juice. This will initiate the fermentation process where sugars in the grape juice are converted to alcohol.

Adding Yeast

Allow the mixture to ferment in a temperature-controlled environment for about 7-14 days. Monitor the fermentation process closely.

Fermentation

After fermentation, add the sulfur dioxide to stabilize the wine and prevent spoilage. This should be done in a sanitized environment.

Adding Sulfur Dioxide

Transfer the wine into a new vessel, leaving behind the sediment at the bottom of the fermentation tank. This process is known as racking.

Racking

Allow the wine to mature in barrels or tanks for several months. This will enhance the flavors and complexity of the wine.

Maturation

Once matured, bottle the wine using clean and sterilized bottles. Seal them with corks and label appropriately.
