Grilled Pineapple with Baharat and Coconut

Prepare the Pineapple
Start by cutting the top and bottom off the pineapple to create a stable base. Stand the pineapple upright and carefully slice off the skin, ensuring to remove all the eyes. Once peeled, slice the pineapple into 1-inch thick rings.

Season the Pineapple
In a bowl, sprinkle the Baharat spice blend evenly over the pineapple rings. Make sure to coat both sides for maximum flavor.

Prepare the Coconut
While the pineapple is grilling, toast the coconut flakes in a dry skillet over medium heat. Stir frequently for about 3-5 minutes until they are golden brown. Remove from heat and set aside.

Make the Ginger Beer Lime Mix
In a large pitcher, combine the ginger beer and freshly squeezed lime juice. Stir well to mix.

Once the pineapple is grilled, place the warm pineapple rings on a serving platter. Sprinkle the toasted coconut flakes generously on top. Serve alongside the ginger beer and lime mix for a refreshing pairing.
