Select a cocktail shaker and add a handful of ice to it.

Pour in 2 oz of mezcal, 1 oz of Meletti, 0.5 oz of demerara syrup, 1 oz of aquafaba, and 0.75 oz of fresh lemon juice into the shaker with ice.

Shake the Mixture
Secure the lid on the shaker and shake vigorously for about 15-20 seconds to combine the ingredients and create a frothy texture from the aquafaba.
