Prepare the Beans
Rinse the Bulgarian white beans under cold water. Soak them in a large bowl with enough water to cover them for at least 8 hours or overnight. After soaking, drain and rinse them again.

Cook the Beans
In a large pot, add the soaked beans and 4 cups of vegetable broth. Bring to a boil, then reduce the heat to low and simmer for about 1 hour, or until the beans are tender. Add salt and pepper to taste.

Sauté the Vegetables
While the beans are cooking, chop the onion, red bell pepper, and yellow bell pepper into small pieces. In a pan, heat 4 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Combine Ingredients
Once the beans are tender, combine them with the sautéed vegetables in the pot. Stir in 2 teaspoons of paprika and adjust salt and pepper as needed. Let it cook together for another 10-15 minutes on low heat to meld the flavors.

Chop fresh parsley and sprinkle it over the dish just before serving. Serve hot as a main dish or alongside crusty bread.
