Prepare the Fish
Preheat your broiler on high. In a small bowl, mix the lemon juice, minced garlic, olive oil, salt, and black pepper. Brush the mixture over both sides of the fish fillets.

Sauté the Spinach and Tomatoes
In a skillet, heat the remaining olive oil over medium heat. Add the sundried tomatoes and cook for about 2 minutes. Then add the fresh spinach and cook until wilted, about 3-4 minutes. Season with salt and pepper to taste.

Broil the Fish
Place the fish fillets on a baking sheet lined with foil. Pour the white wine over the fish and broil for about 5-7 minutes or until the fish is cooked through and flakes easily with a fork.
