Preparing Roasted Cumin (Zeera)

Grind seeds
Transfer toasted cumin to a mortar and pestle or spice grinder. Grind to a coarse powder (some texture is good) — about 20–30 seconds. Allow to cool for a minute.
Making the Zeera Pani

In a large pitcher, combine the cold water and freshly squeezed lemon juice. Stir to blend.

Add the granulated sugar, fine sea salt, and freshly ground black pepper to the pitcher. Stir until the sugar and salt are fully dissolved (taste and adjust sweetness/saltiness as desired).

Add the freshly ground roasted cumin to the pitcher. If using cumin powder for extra punch, add it now. Whisk vigorously or use a handheld frother for 20–30 seconds to fully incorporate the cumin and create a slightly frothy top.

Lightly bruise the mint leaves by clapping them between your palms or gently crushing with the back of a spoon to release aroma. Add the mint leaves to the pitcher. If using green chili, slit or halve it and add to the pitcher for a subtle heat (remove later if desired).

Stir everything together and refrigerate for at least 10 minutes to let the flavors meld (up to 1 hour for stronger infusion).
Serving

Fill four tall glasses with ice cubes (about 1/2 cup ice per glass).

Pour the chilled zeera pani through a fine mesh strainer into the glasses to catch mint pieces, cumin husks, and chili seeds if used. Divide evenly among glasses.
