Chicken Haleem Recipe

    Prepare grains and legumes

    Soak the pearl barley in cold water for 2–4 hours. Rinse the moong, masoor and chana dal together and set aside. Drain the barley before using.

    Brown chicken and build stock

    In a large heavy-bottomed pot or Dutch oven, heat 2 tablespoons oil or ghee over medium-high heat. Add the chicken pieces and sear 3–4 minutes per side until light golden (they will finish cooking later). Remove chicken and set aside. Add 1 liter of water to the pot, scrape up any browned bits, return the chicken, add bay leaves and the whole spices (green cardamom, black cardamom, cloves, cinnamon). Bring to a boil, reduce to a simmer, cover and cook gently 30–40 minutes until chicken is cooked through and tender. Remove chicken, reserve the broth and let it cool slightly; keep the broth in the pot.

    Combine grains & lentils with stock

    To the reserved hot broth in the pot, add drained barley and the mixed dals. Pour additional water as needed to reach about 2.0–2.5 liters total (there should be enough liquid to cover and allow long simmering). Bring to a simmer, cover partially, and cook on low heat for 1–1.5 hours, stirring occasionally to prevent sticking. The mixture should soften and start to break down.

    Caramelize onions & aromatics

    While grains cook, in a separate skillet heat remaining 2 tablespoons oil or ghee over medium heat. Add the sliced onions and cook, stirring frequently, for 12–18 minutes until deeply golden and caramelized. Add grated ginger and minced garlic and cook 2 minutes more until fragrant. Add chopped tomato and slit green chilies and cook until tomato softens, 4–5 minutes.

    Spice the aromatics

    Stir in coriander powder, cumin powder, red chili powder and turmeric. Cook 1–2 minutes to toast spices and incorporate into the onion mixture. Add this aromatic-spice mixture into the pot with the simmering grains and lentils. Stir thoroughly to combine.

    Adjust spices in pot

    Add black pepper and salt to the pot (start with measured amount and adjust later). If whole spices were removed with the chicken, add fresh whole spices now (reserve bay leaves if desired). Ensure the mixture is gently bubbling; reduce heat to low, cover and continue to cook slowly for 2–3 hours, stirring every 20–30 minutes and mashing any intact grains and lentils against the side of the pot with a sturdy spoon or ladle to help them break down.

    Shred chicken and return

    While the mixture simmers, debone the cooked chicken, shred the meat finely and discard skin/bones (or reserve small pieces for texture if preferred). Stir shredded chicken back into the pot. Continue slow cooking; the goal is a homogeneous, porridge-like consistency. Add extra water if it looks too thick—haleem should be thick but spoonable. Total simmering time from this point should be 3–4 hours on very low heat for the best breakdown and flavor melding.

Finishing & garnish

    Blend to achieve haleem texture (optional)

    For a smoother, traditional haleem texture, use an immersion blender in short pulses to lightly puree some of the pot, or remove 2 cups of the mixture, blend until smooth and return to the pot. Do not overblend—leave some shredded chicken and texture. Stir in cream or yogurt and ghee (if using) and simmer 5–10 minutes to incorporate and enrich the haleem.

    Final seasoning and serve

    Taste and adjust salt, black pepper and chili as needed. Transfer haleem to a serving dish. Top generously with fried onions, chopped cilantro, ginger julienne, sliced green chilies, a drizzle of ghee, and lemon wedges on the side. Serve hot with naan or paratha.
