Fries

Prep potatoes
Wash and peel the potatoes (peel optional). Cut into 1/3–1/2-inch matchstick fries so they cook evenly.

Rinse and soak
Place cut fries in a large bowl of cold water and rinse to remove surface starch. Soak for at least 30 minutes (or up to 2 hours) to ensure crispiness.

Dry thoroughly
Drain the potatoes and spread them on a clean kitchen towel or paper towels. Pat completely dry — excess moisture will cause oil splatter and soggy fries.

Rest
Let the blanched fries cool for 10–15 minutes. This can be done while you prepare the spice blend and warm the butter.

Second fry (crisp)
Increase oil temperature to 375°F (190°C). Fry the cooled potatoes again in batches for 2–3 minutes until golden brown and crisp. Remove and drain on a wire rack or paper towels. Immediately sprinkle 1 tablespoon salt across the hot fries for basic seasoning.

While fries are resting after the first fry (or in a small bowl ahead of time), combine the ground coriander, ground cumin, ground fennel, black pepper, dry mango powder (or lemon zest), crushed kasuri methi, garlic powder, onion powder, smoked paprika, fine brown sugar, and 1/2 teaspoon salt. Mix well to create a uniform blend.

Taste a tiny pinch and adjust balance if needed: more amchur or lemon zest for tang, more brown sugar for a hint of sweetness, or more smoked paprika for deeper smoky notes.
Finishing & Serving

Toss with butter and spice
Place hot, drained fries in a large mixing bowl. Pour the 2 tablespoons melted butter over the fries and immediately sprinkle the prepared Brown Sahib blend over them. Toss gently but thoroughly so the spices and butter coat the fries evenly. If using, add 1/2 teaspoon chaat masala and toss again.

Garnish
Sprinkle chopped fresh cilantro over the tossed fries.

Serve
Transfer fries to a serving platter or individual plates, serve hot with lemon wedges on the side for squeezing, and offer ketchup, raita or mint chutney as dipping options if desired.
