    Clean and pat dry the chicken pieces. In a bowl combine yogurt, turmeric, red chili powder, salt and ginger-garlic paste. Add the chicken and coat well. Cover and refrigerate for at least 30 minutes, up to 2 hours for better flavor penetration.

Sauce & Pickle Flavor

    Prepare aromatics

    Heat oil (and ghee, if using) in a heavy-bottomed pan over medium heat. If using mustard seeds and fenugreek seeds, add mustard seeds and let them crackle, then add fenugreek seeds and fry 10–15 seconds until fragrant but not burned.

    Add the sliced onions and a pinch of salt. Fry on medium-low heat, stirring often, until onions are deep golden brown and caramelized, about 12–15 minutes. This step builds sweet and complex base flavors for the achar profile.

    Add the julienned ginger, sliced garlic and slit green chilies. Sauté 1–2 minutes until raw aroma dissipates.

    Stir in the tomato purée and cook 3–4 minutes until oil begins to separate slightly from the mixture.

    Add coriander powder, cumin powder, achar masala (if using), and cook 1 minute to roast the spices. Add the achar (pickle) – including its oil and chunky pieces – and mix thoroughly. Cook 2–3 minutes so the pickle melds with the onion-tomato base.

    Sprinkle amchur (or lemon juice) and add salt. Stir to combine and taste; adjust tang and salt as needed. If the sauce looks too thick, add about half the water (100 ml) and bring to a gentle simmer.

Cooking Chicken

    Increase heat to medium-high. Add the marinated chicken pieces to the simmering sauce in a single layer. Sear 3–4 minutes on each side (for bone-in, just 4–5 minutes) to seal in juices and let the chicken absorb the achar flavors.

    Once pieces are lightly browned, pour the remaining water (about 100 ml) into the pan, reduce heat to medium-low, cover and simmer until chicken is cooked through: about 12–18 minutes for boneless, 25–30 minutes for bone-in. Stir gently once or twice to prevent sticking.

    Uncover and raise heat to medium-high to reduce excess liquid if needed, 3–5 minutes, stirring so the sauce clings to the chicken. Taste and adjust seasoning; add garam masala and mix in during the final 2 minutes of cooking.

Tempering & Finishing

    Sprinkle crushed kasuri methi over the curry and stir. Turn off the heat and garnish with chopped fresh coriander leaves.

    Let the curry rest covered for 5 minutes to marry flavors. Serve hot with lime wedges on the side so diners can squeeze extra tang as desired.
