Quick-pickled onions (optional, 20 minutes)
Slice the white onion thinly into half-moons. Place in a bowl and toss with 0.5 tsp salt and the juice of 1 lime. Let sit 20 minutes, stirring once. If you prefer a true quick-pickle: heat 1/2 cup water, 1/2 cup apple cider vinegar, and 1 tbsp sugar until dissolved, pour over sliced onions, cool to room temp and refrigerate at least 15 minutes. Drain before using.

Heat a heavy skillet or cast-iron pan over medium-high heat until very hot. Add a drizzle of oil if pan is dry. For thin-sliced carne asada or pollo, cook 2–3 minutes per side until charred and cooked through. For pork carnitas pieces, cook until edges are crispy and internal temperature reaches safe level (pork 145°F/63°C), about 6–8 minutes, turning occasionally. Remove meat to a cutting board and rest 3–5 minutes, then slice or chop into bite-sized pieces for tacos.

Keep meat warm while preparing cheese and tortillas.
Crispy Melted Cheese

Heat a nonstick or cast-iron skillet over medium heat and add 1 tsp oil, swirling to coat. Spoon about 1/4 cup shredded cheese into the skillet and spread into a thin round (roughly the size of a tortilla). Cook 1–2 minutes until the edges brown and the cheese becomes lacy and crisp.

Using a thin spatula, flip the cheese crisp and cook 20–30 seconds more if you like it extra-browned. Transfer the cheese crisp to a paper towel-lined plate to drain. Repeat to make 8 cheese crisps (about 1/4 cup cheese each).

You can also make a larger cheese blanket: cook a bigger round and while still pliable, place on top of a warm tortilla to melt and adhere, creating a cheesy shell — see assembly step.
Tortillas & Assembly

Warm tortillas: heat a dry skillet over medium-high. Brush both sides lightly with vegetable oil (about 2 tbs total across all tortillas). Warm each tortilla 20–30 seconds per side until pliable and slightly charred in spots. Keep wrapped in a clean towel to stay warm.

Assemble each taconazo: place a warm tortilla on a plate. If using individual cheese crisps, place one crisp on the hot skillet for 5–8 seconds to re-melt slightly and drape it onto the tortilla so it melts onto the tortilla surface (this yields a crispy-melt layer). Alternatively, place a large melted cheese blanket onto the tortilla.

Drizzle 1–2 tablespoons of guac sauce over the filling (see next section). Finish with an extra squeeze of lime and a pinch of salt if desired.
Guac Sauce

Make the guac sauce while meat rests: halve and pit the avocados and scoop into a blender or bowl. Add 1/4 cup Greek yogurt (or sour cream), 1/4 cup packed cilantro, juice of 2 tbsp lime, 1/2 jalapeño (seeded if desired), 1 garlic clove, 1/2 tsp salt, and 1 tbsp water.

Blend or mash until smooth and creamy. Adjust salt, lime, or water to reach a pourable sauce consistency. Transfer to a squeeze bottle or small bowl for assembly.
Finishing & Serve

Arrange completed taconazos on a platter. Garnish with extra chopped cilantro, pickled onion, and lime wedges on the side.

Serve immediately while cheese is still warm and crisp. Leftover guac sauce keeps in an airtight container for up to 24 hours (stir before using).
