Pico de gallo (fresh salsa)

Combine diced tomatoes, diced onion, chopped cilantro and minced jalapeño in a medium bowl.

Add lime juice, salt and pepper. Stir to combine and taste; adjust salt or lime as needed.

Let rest at room temperature for 10–15 minutes to allow flavors to meld while you prepare the eggs.

Crack the eggs into a mixing bowl. Add the milk, salt, and pepper. Whisk vigorously until homogenous and slightly frothy (about 20–30 seconds).

Using a silicone spatula, gently push eggs from the edges toward the center, forming large soft curds. Continue folding and moving the eggs until they are mostly set but still slightly glossy and creamy—about 2–3 minutes total. Remove from heat slightly before fully set; residual heat will finish them.

Taste and adjust seasoning if needed.
Warm tortillas and optional beans

If using refried beans, warm them in a small saucepan over low heat, stirring occasionally, or microwave in a covered bowl for 45–60 seconds until heated through.

Warm a large skillet over medium heat. Lightly brush or rub each tortilla with a little oil or butter. Warm each tortilla 20–30 seconds per side until pliable and lightly toasted in spots. Keep warmed tortillas covered with a clean towel to stay soft.
Assemble the ranchero burritos

Lay a warmed tortilla flat on a work surface. If using refried beans, spread about 1/4 cup of warmed beans down the center of the tortilla in a line, leaving 1–2 inches at the ends.

Place half of the scrambled eggs on top of the beans (or directly on the tortilla if not using beans).

Sprinkle about 1/2 cup shredded cheese over the eggs so it begins to melt from the residual heat.

Spoon about 1/4 cup pico de gallo over the cheese and eggs. Add 1 tablespoon sour cream if using.

Fold the bottom edge of the tortilla up over the filling, fold in the sides, then roll tightly to form a burrito. Place seam-side down to hold.

Repeat with the second tortilla and remaining fillings.

Optional finishing: For a lightly crisp exterior, heat a clean skillet over medium and place burritos seam-side down for 1–2 minutes per side, pressing gently, until golden and crisp.

Slice in half if desired and serve immediately with extra pico de gallo on the side.
