    warm or lightly crisp tortillas

    Heat a large skillet over medium-high heat. Add 1 tbs vegetable oil and swirl. Working one at a time, cook each corn tortilla 20–30 seconds per side until softened with a few brown spots (or cook longer 45–60 seconds per side for crispier edges). Transfer to a plate and keep warm wrapped in a clean towel. If you prefer, keep tortillas stacked in a low oven (200°F / 95°C) to stay warm while you finish other components.

    When ready to assemble, place one warmed tortilla on a plate, sprinkle about 1/4 cup shredded cheese over it so it begins to melt from the residual heat. Reserve remaining cheese for topping.

Steak

    season and cook steak

    Pat steak dry with paper towels. Season both sides with 1 tsp salt, 1 tsp black pepper, and 1/2 tsp ground cumin. Heat a cast-iron skillet or heavy pan over medium-high heat until very hot. Add 1 tbs olive oil and swirl. Add steak and sear 2–3 minutes per side for medium-rare depending on thickness (cook longer for desired doneness). Internal temp ~130°F for medium-rare.

    Transfer steak to a cutting board and let rest 5 minutes. Slice thinly against the grain into bite-size strips or small pieces appropriate for topping tortillas.

Pico de gallo

    In a bowl combine 1 cup diced tomatoes, 1/4 cup diced onion, 1/4 cup chopped cilantro, minced jalapeño, 1 tbs lime juice, and 1/2 tsp salt. Taste and adjust lime or salt. Let sit 5–10 minutes to marry flavors while you cook eggs; can be made ahead and chilled.

    In a medium nonstick skillet, heat 1 tbs butter over medium. Crack 4 eggs into the pan. Cook sunny-side up 3–4 minutes until whites are set but yolks remain runny (cover pan for 30–60 seconds to set whites on top if needed). For over-easy, flip gently and cook 15–30 seconds more. Season eggs with a pinch of salt.

    Top each cheese-coated tortilla with a portion of sliced steak (about 3 oz per tortilla if dividing evenly), then gently place one fried egg on top. Spoon 2–3 tbs pico de gallo over each egg and scatter remaining shredded cheese. Add hot sauce or extra salsa to taste. Serve immediately so eggs are runny and tortillas warm.

    Garnish option: sprinkle extra chopped cilantro and a lime wedge on the side. Leftovers: keep components separated and reheat steak and tortillas; re-fry eggs for best texture.
