Preparing the Mignonette

Combine ingredients

In a small bowl, whisk together red wine vinegar, finely minced shallot, cracked black pepper, fine sea salt, optional white pepper, and sugar (if using) until the salt and sugar dissolve and the shallot is evenly distributed.

Taste and adjust: taste a small amount on a spoon and adjust acidity or seasoning: add up to 1 tsp more vinegar if too mild, or a pinch more sugar if too sharp. Cover and refrigerate for at least 15 minutes to let flavors meld; can be made up to 24 hours ahead.

Shucking and Serving Oysters

Prepare serving bed

Heap crushed ice onto a large shallow platter or individual plates to create a stable bed for the oysters. Spread the ice evenly so oyster shells sit level.

Shuck oysters

Hold an oyster flat-side up in a thick towel or oyster glove. Insert the tip of the oyster knife at the hinge and twist gently until it pops. Slide the knife along the top shell to sever the adductor muscle and remove the top shell. Run the knife under the oyster to free it from the bottom shell while keeping the liquid (liquor) in the shell. Place each shucked oyster on the bed of ice.

Check for shell fragments: quickly inspect and remove any stray shell pieces. Keep oysters cold; work quickly so the oysters remain chilled.

Finish and garnish

Place a small spoonful (about 1/2 tsp to 1 tsp) of chilled mignonette atop each oyster or serve mignonette in a small bowl for guests to spoon themselves. Arrange lemon wedges around the platter. Optionally sprinkle a few microgreens or chopped chives over the platter for color. Serve immediately with cocktail forks and extra lemon on the side.
