Prepare clams
Rinse manila clams under cold water, discard any with cracked shells or that do not close when tapped. If needed, soak clams in lightly salted cold water for 20 minutes to purge sand; drain and rinse again.
Deglaze & simmer
Raise heat to medium-high, add the diced tomatoes and red pepper flakes, stir and cook 1–2 minutes to warm the tomatoes. Pour in the white wine, increase heat to bring to a vigorous simmer, and let wine reduce by about one-third (3–4 minutes).
Finish sauce
Remove clams with a slotted spoon into a bowl, leaving the cooking liquid in the pan. Reduce liquid 1–2 minutes if too thin. Stir in lemon juice, lemon zest, remaining 1 tablespoon olive oil, chopped parsley, and season with salt and pepper to taste. Return clams to the pan and gently toss to coat in sauce.

Prepare optional gelatin
If you want the terrina to hold a firmer, sliceable shape for presentation, soften 1 gelatin sheet in cold water for 5 minutes (or sprinkle 1 tsp powdered gelatin over 2 tbsp cold water and bloom 5 minutes). Warm a couple of tablespoons of the clam cooking liquid (do not boil) and dissolve the squeezed gelatin sheet or bloomed powdered gelatin in it.
Assemble terrina
Lightly oil a small terrine mold or loaf pan (about 8 x 4 inches) with the neutral-flavored olive oil. Spoon about half of the clams and a portion of the sauce into the mold, arranging clams evenly. If using gelatin, drizzle some dissolved gelatin evenly over the first layer. Add remaining clams and pour remaining sauce over, pressing down gently to pack. Cover tightly with plastic wrap.
Chill
Refrigerate the terrina for at least 2 hours, preferably 3–4 hours, until set and flavors meld. If you prefer a warm serving, you can skip gelatin and serve clams directly on crostini instead.
Unmold & finish
To serve chilled, run a thin knife along the terrine edge, invert onto a serving platter, and remove lining. Spoon any excess sauce back over terrina, scatter remaining chopped parsley, and drizzle a little extra-virgin olive oil.
Crostini
Toast bread
Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet, brush both sides lightly with olive oil, and toast 6–8 minutes, flipping halfway, until golden and crisp.
Garlic rub & season
Remove crostini from oven, while still warm rub each slice with the halved garlic clove, then sprinkle lightly with sea salt.
