    Prepare the Eggplant

    Slice eggplant into 1/4 inch rounds. Heat oil in a skillet over medium heat and fry the eggplant until golden brown on both sides. Remove and drain on paper towels.

    Toast the Bread

    Brush each slice of Italian bread with olive oil and toast them in a pan or a toaster until golden and crispy.

    Assemble the Panini

    On one slice of toasted bread, spread a layer of garlic aioli, then layer with grilled chicken, roasted red peppers, fried eggplant, fresh spinach, and top with mozzarella cheese. Add another slice of bread on top.

    Grill the Panini

    Place the assembled sandwich in a panini press or a skillet. Cook until the cheese is melted and the bread is golden brown, about 3-5 minutes on each side.

    Serve

    Cut the panini in half and serve with house marinara sauce for dipping.
