Preparation Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C).
2. Mix Dry Ingredients
In a large bowl, combine almond flour, coconut sugar, baking powder, and salt.
3. Prepare Flax Egg
In a small bowl, mix ground flaxseed with 3 tablespoons of water. Let it sit for 5 minutes to thicken.
4. Combine Wet Ingredients
In another bowl, mix the almond milk, melted coconut oil, vanilla extract, and the prepared flax egg.
5. Combine Mixtures
Pour the wet mixture into the dry ingredients and stir until just combined. Fold in the cacao nibs.
6. Bake
Pour the batter into a greased baking dish and spread evenly. Bake for 25-30 minutes or until a toothpick comes out clean.
7. Cool and Serve
Allow to cool for a few minutes, then cut into squares and serve topped with fresh berries.
