Method

Grilling the Filet Mignon

    Grill the Steak

    Preheat the grill to medium-high heat. Season the filet mignon with salt and black pepper, then grill for about 5-7 minutes on each side, or until it reaches your desired level of doneness. Remove from grill and let rest.

Preparing the Scampi Sauce

    Sauté the Shrimp

    In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the shrimp and cook until pink and opaque, about 3-4 minutes.

    Make the Sauce

    Pour in the white wine and bring to a simmer. Add roasted red peppers, lemon juice, salt, and black pepper. Cook for an additional 3-4 minutes, allowing the sauce to reduce slightly.

    Finish the Sauce

    Remove from heat and stir in the remaining 2 tablespoons of butter and chopped parsley until melted and combined.

Serving

    Plate the Dish

    Slice the grilled filet mignon and place it on a serving plate. Top with the sautéed shrimp and scampi sauce. Garnish with additional parsley if desired.
