    Marinate the Steak

    In a bowl, mix olive oil, lime juice, minced garlic, ground cumin, and black pepper. Add the flank steak, ensuring it is well coated. Cover and let it marinate in the refrigerator for at least 30 minutes.

    Grill the Steak

    Preheat your grill to medium-high heat. Remove the steak from the marinade and grill for about 5-7 minutes on each side or until it reaches your desired doneness. Let it rest for a few minutes before slicing it thinly against the grain.

    Sauté the Vegetables

    In a skillet over medium heat, add a splash of oil. Sauté the sliced onion and green bell pepper until they are soft and slightly caramelized, about 5-7 minutes.

    Assemble the Quesadillas

    On one half of each tortilla, layer some of the sautéed vegetables, sliced steak, and shredded jack cheddar cheese. Fold the tortillas over to create a half-moon shape.

    Cook the Quesadillas

    Wipe the skillet clean and return it to medium heat. Cook each quesadilla for 3-4 minutes on each side or until the tortillas are golden brown and the cheese has melted.
