    Prepare the Black Bean Mixture

    In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

    Mix Ingredients

    Add cooked quinoa, corn, diced red onion, garlic powder, cumin, salt, black pepper, egg, and bread crumbs to the mashed beans. Mix until well combined.

    Form Patties

    Divide the mixture into four equal portions and shape each portion into a patty.

    Cook the Patties

    Heat a non-stick skillet over medium heat. Cook each patty for about 4-5 minutes on each side, or until golden brown and heated through.

    Melt the Cheese

    During the last minute of cooking, place a slice of aged cheddar cheese on each patty and cover the skillet to melt the cheese.

    Assemble the Burgers

    Toast the brioche rolls if desired, then place each patty on a roll. Top with lettuce, pico de gallo, and a drizzle of chipotle aioli.
